We have achieved our goal from last week: Cross Country skiing up Mill Creek Canyon! And when I say “up” Mill Creek Canyon, I mean UP. You can never quite realize how steep something is until you can start going backward at any moment. That was a bit of a side note, but you will be used to that by the end of this post. I promise. I absolutely hate people who put their feet or stuff on the seats next to them when there are clearly not enough seats for everyone to sit down in the first place. On this particular day there were two girls who had their backpacks on the seats next to them. So, of course I walked right up to one and asked to sit next to her. She moved her stuff, and I sat down, feeling very satisfied.

Read MoreWe are extremely fortunate to live on the Wasatch Front. Why, exactly? Because we are five minutes away from hiking, camping, snowshoeing, skiing, and snowboarding. One of my absolute favorite hikes is known locally as Elephant Rock. It is located in Mueller Park Canyon, which may be the official trail name, I’ve never been sure. It’s called Elephant Rock because from a distance it vaguely… sort of… looks like an elephant’s head. At least, that’s what I say.
